FORGET Masterchef; the Shoalhaven
has a stack of award winning chefs and
aspiring culinary creators.
Kyle Alexander is a perfect example.
He was named one of the top chefs in
Australia after finishing in the top five of
the Food Service Australia National
Chef of theYear Championships in June.
Held at Melbourne Exhibition Centre
as a part of Food Service Australia
Expo, the 23 competing chefs were
faced with a mystery box challenge and
given one hour to complete three
The participants were given only 15
minutes' warning of the ingredients they
had to cook with, in which time they had
to plan their menu. They had a further
15 minutes to gather all their
"I enjoyed it, it was very good. It was
pretty nerve-racking, though, with

Challenge lunch, beating more fancied
rivals from the Southern Highlands, the
Mid-North Coast and the Mudgee
As part of the Crave festival, teams
from five NSW regions battled it out for
the pleasure of six judges and 500
diners using food sourced only from
within 160km of their major town.
The South Coast team was judged to
have produced the best main course
and best dessert, and was also highly
praised for its matching of the wines
with each course.
TAFE Tourism and Hospitality students
and staff from the Nowra Campus have
continued their dates at Destiny's
training restaurant over the past year.
This program of celebrity chef dinners
has proven very popular and stretches
the students, who put in massive
amounts of kitchen hours to recreate
some of Australia's finest dining. The
